The federal government program promoted by Michelle Obama is dictating how school lunches are prepared, and many school administrators are steamed about it.
School lunch nutritionists have belly-ached that whole-grain used to make tacos, pizza crusts, rolls, biscuits, tortillas and grits healthier are actually leading to increased waste and expense, Fox News reported.
“If the kids don’t eat the food, then all I have is healthy trash cans,” Peggy Lawrence, director of nutrition at Georgia’s Rockdale County Public Schools said, according to Fox.
Now, the School Nutrition Association is beseeching Congress to ease restrictions on school lunches’ whole-grain, sodium and fruit and vegetable content.
No one disputes that greasy fries and pepperoni pizza should not be standard fare, but Alexandria City Public Schools Nutrition Director Becky Domokos-Bays said new nutritional directives were rushed into effect.
“When kids don’t buy lunch or throw it away, it costs the schools precious dollars,” she said after watching whole-grain pasta rejected over and over again. “The regulations are so prescriptive, so it’s difficult to manage not only the nutrition side of your business, but also the business side of your business.”
Department of Agriculture spokeswoman Janey Thornton said food vendors were working hard to develop better-tasting pastas, which would resolve the problem over the next few years.
U.S. Rep. Robert Aderholt, R-Ala., a member of a House subcommittee overseeing the U.S. Department of Agriculture budget, called for a “pause” in enforcement regulations. But White House nutrition policy adviser Sam Kass insisted recently that strides had been made and there was no turning back.
Kids, of course, will have the last word at the lunch table, and Big Brother can’t do a thing about it.
